White asparagus to celebrate Spring

Every new season brings new fruits and veggies. Some better than others. No need to mention that after a long and cold winter, spring is generally welcomed, waking up our taste buds with the freshness of its new pro products, among which, the white asparagus.
Less known than its sister, the green asparagus, white asparagus differs with its delicate nutty flavor and its soft fare less fibrous. The white asparagus is grown entirely under ground, in the absence of light.
Asparagus is a vegetable low in calories (as long as you don’t drown with the dressing!) and particularly rich in minerals. To preserve the nutritional intake, steaming is preferable (it prevents the leakage of minerals in the cooking water).
