French endives : a fast but healthy meal
It’s always the same ritual: we came home late from work, the fridge is growling and you just don’t feel like cooking, not tonight. And that’s how we usually ends with a bowl of macaroni and cheese!

French endives are o convenient, a perfect base for salads. Raw, it’s crunchy and watery, delicious! But it turns out it’s also very good warmed or cooked. An example of a recipe that is prepared in minutes, just long enough toset the table!
WARM ENDIVES SALAD
Prep time : 5 min
Cooking time : 5 min
Ingredients (for 2)
3 French endives (medium size)
About 10 cherry tomatoes
1 french shallot
2 to 3 spoons of crushed pistachios
1 tbsp olive oil
2 tbsp balsamic vinegar
salt and pepper
1. Cut the endives’ bottoms (bitter part) and strip the leaves off. Cut the tomatoes into quarters. Finely shop the shallot.
2. In a pan, heat the olive oil and fry the shallot for 1 min. Deglaze with the vinegar and add the endives. Cook for 2 minutes. At the end, add the rest of the ingredients. Serve immediately.
